Porridge with Caramelized Banana

Its raining, and unpleasant. The sky is grey, and full of photographic discouragement.
Nevertheless, I did what I always do on a cold weekday morning. Make Porridge.
You will need:

  • 1 Cup Rolled Oats
  • ± 1 Cup of Milk
  • 1 Banana
  • 3/4 Cup of Dark Brown Sugar

Rolled outs are much better in flavour than packaged, microwave oats.


Place oats in a pot., then add milk to cover oats.






Place brown sugar in a non-stick pan, and add 2 tablespoons of water.





Slice Bannana
After about a minute (on high heat) the sugar mixture should start to caramelize. 
Stir Porridge until thick, then set aside.

Add sliced banana, when all of brown sugar is bubbling.

Place porridge in a bowl.


Poor caramalized banana over porridge. 






Making this post was very difficult due to the lighting of the dull overcast day, that was friday. Hopefully, next week there will be some nice sunlight.

Strawberry Pancakes with a Strawberry Compote!

Its Saturday morning, and I feel like something sweet.
Ingredients:
  • 1 punnet of fresh strawberries.
  • 1 cup of milk
  • 1/2 cup of plain flour
  • 1/2 cup self raising flour
  • 1 teaspoon of Vanilla essence.
  • 1 free range egg
  • 1 cup of sugar.
Strawberries and Milk, a messy but amazing combination.

Slice strawberries.

Place all dry ingredients in a bowl (but only half of the sugar.)

Make a well in the middle and add egg.


Slowly mix dry ingredients into the egg.

Add milk.

and vanilla essence.

Mix until it resembles paint (add/subtract milk.)

Add half the strawberries.

Mix.
Begin preparing first pancake (in a greased nonstick pan).

Meanwhile, add the rest of the strawberries into a non-stick pan.

Cook for 1 minute, add water, then after another minute - add the rest of the sugar.


Simmer until finished cooking all the pancakes (stirring occasionally)


Turn, when brown.

Set aside.


Add compote.


Delicious! But remember, its very sticky.

Mushroom, Corn, Onion and Mozzarella Omelette!

"Free range eggs are important for flavour and colour"





Cook onions and then mushrooms.

Add egg mixture (Herbs, Egg, Salt).

After 30 seconds, add mushrooms, onions, corn and mozzarella cheeze.

Fold into thirds after 1 minute.
